Fish in Green Sauce

Ingredients

Fish

  • 2 Salmon Steak
  • Salt
  • Ground Black Pepper
  • 1/8 tsp. ground turmeric
  • 1/8 tsp. Cayenne pepper

    Green Sauce
  • 3 Tbs. Olive Oil
  • 1/3 cup finely chopped onion
  • 2 cloves garlic, finely chopped
  • 1 cup finely chopped fresh cilantro
  • 1 medium tomato, finely chopped
  • 2 fresh hot green chilies (don’t remove the seeds) chop these babies finely
  • 1 tsp. Peeled, finely grated fresh ginger
  • 1 Tbs. lemon juice
  • 1/8 tsp. salt
  • 1/8 tsp. cayenne pepper
  • ½ tsp. garam masala
  •  

    Directions

    Rub the fish seasonings onto both sides of the fish and set aside. Make sure to use plenty of salt and pepper.

    Heat the oil in a nonstick frying pan over high heat. When hot put the fish in and brown quickly on both sides. Now don’t be cooking it at this time just get the outsides browned.

    Take out the fish leaving the remnants of the oil in the pan. Brown the onion and garlic in the oil. Then put in the cilantro, tomato, chilies, ginger, lemon juice and salt. Stir and cook over medium-high heat until the cilantro and tomato have completely wilted together. Now, spread the sauce around the frying pan and check the salt level to make sure it’s to your very specific taste. Then lay the fish on top. Spoon some sauce over the fish and sprinkle the cayenne and garam masala over the top. Bring to a simmer, cover, lower the heat and simmer for about 10 minutes. (If you live in Dallas, just put it outside on the porch.)
